🍅🍕 PIZZA POPPERZZ 🍕🍅 These are made with Quinoa, which is gluten-free, has a low glycemic index and provides all of the eight essential amino acids, creating a complete protein. 👌 It's one of the best sources of protein in the vegetable kingdom. 💪🍆🌽💪 Words can't explain how amazing these lil guys are....you're just going to have to make them for yourself and watch how fast they'll be gone! 💨💨💨 INGREDIENTS: 🔻1 heaping cup of raw quinoa. 🔻3 large eggs, beaten. 🔻1 tablespoon of tomato paste. 🔻1 1/2 cups of shredded mozzarella cheese. 🔻1/4 cup of olives, pitted, diced and minced. 🔻1/2 cup of sundried tomatoes, diced and minced. 🔻3 tablespoons of grated Parmesan cheese. (Plus a little extra at the end for sprinkling) 🔻1 teaspoon of Italian seasoning 🔻️salt and pepper to taste. 🔻 marinara sauce, for dipping (optional). DIRECTIONS:
1⃣ Combine the 1 cup of quinoa with 2 cups of water in a medium sized sauce pan. Bring to a boil. Stir in the tomato paste.
2⃣ Turn heat down low once it has begun to boil, cover and cook for 12-15 minutes. Set aside, for 5 minutes, fluff with a fork and allow to cool.
3⃣While the quinoa is cooking, preheat your oven to 350 degrees. Spray a mini muffin pan with cooking spray.
4⃣ In a large bowl combine all of the ingredients and mix well.
5⃣ Using a tablespoon scoop the mixture into the muffin pan and press until flat on top using the back of the spoon.
6⃣ Bake for 20 minutes or until nice and golden brown. Remove from oven and let them cool slightly before removing from pan so they don't fall apart.
7⃣ Top with a little sprinkling of grated Parmesan cheese and serve along side some warm marinara sauce for dipping.
